Presto Curry Pesto – just like that

INGREDIENTS :

  • 2 cups cilantro chopped
  • 6 green chilies, minced
  • 1 tablespoon Garlic minced
  • 2 Teaspoons Ginger minced
  • 2 tablespoons Water
  • 2 tablespoons START! Sauce
  • 1 cup fresh or frozen Coconut, grated
  • 1 Teaspoon Cumin seeds toasted and coarsely ground
  • 3 tablespoons fresh Lime juice
  • 1 Teaspoon Sugar
  • Salt to taste

Note: Makes 1 cup

Preparation :

Place the cilantro, chilies, garlic, ginger, START!, and water in a food processor and process to a paste. Add the coconut and process to incorporate. Transfer to a bowl.

Add the coarsely ground cumin.

Stir in the lime juice, sugar, and salt. Serve or use immediately, or refrigerate, covered, until ready to serve. The pesto will keep for about 4 days in a well-sealed container in the refrigerator.
